Cook three, eat one. Shred one and make chicken tacos: equal parts chopped tomato, onion & avocado w/garlic powder and cilantro for your salsa. Black beans, chicken, shredded colby jack cheese, salsa, sour cream on tortilla . The third can be chicken salad: 1/2 c lite mayo, 1 T lemon juice, 1 T white wine vinegar, 1 T dijon mustard, 1/2 t Kosher salt, 1/2 t pepper, 1/3 C celery (or I like english cucumbers), 1/3 C dried cranberries and 2 oz of almonds or other nut. Mix with 2 pounds of chicken shredded coarsely. Service with slice of whole grain bread and sliced tomatoes. Add a side of strawberries and blueberries to complete the meal.
