Dry Rub
1 cup packed dark brown sugar
1 tablespoon dry mustard
½ cup celery salt
1 tablespoon allspice
½ cup onion salt
½ teaspoon ground cloves



Spread brown sugar on baking sheet. Air-dry for 3 to 5 hours, stirring every hour. Sift dried brown sugar into bowl. Stir in celery salt, onion salt, dry mustard, allspice and cloves. Rub liberally over entire surface of meat. Let stand at room temperature for up to 15 min. or marinate in refrigerator for up to 24 hours.
